Hi, Amazing People,

It has been unintentionally too long. It has not been the easiest experience sharing my time between all my activities. I’m hoping to get into the cruise control phase soon, but it has not happened yet. Who else combines a daytime job with creating online content? I’ll love to hear some of your tips.

Food is one thing that just keeps me truly happy. If I haven’t said it already, I LOVE THAI FOOD! After Nigerian cuisines, Thai food follows right after in my books. I also enjoy making them at home and saving some cash. As an international student, it’s always great to eat meals that offer a different taste, but still give me a taste of home, and that’s what Thai food does for me.

This Pineapple Fried Rice recipe combines sweet, savoury, and spicy in the best way. It’s super easy to make and I’m sure you will enjoy it. 

Ingredients

Butter – 2 Slices
Onions – 1 Medium Size
Chicken Breast – 1 Pound (0.5kg)
Chicken spice – 1 Tablespoon
Minced Garlic – 1 Teaspoon
Spring  Onions – 3
Sweet Pepper – 3
Soy Sauce – 1 Teaspoon
Fish Sauce – 1 Teaspoon
Curry – 1/4 Teaspoon
Chopped Pineapple – 1/2 Cup
Bell Pepper – 1/2 Red & Green
Egg – 1
Cayenne Pepper – 1 Teaspoon (Optional)
Cooked Jasmine Rice – 1 Cup

Steps

1) To a clean non-stick pan, add 1 slice of butter and melt
2) Add 1/2 of your sliced onions, stir-fry until translucent
3) Add chopped chicken breast and chicken spice
4) Stir-fry mixture for 7-10 minutes
5) Remove mixture from the pan
6) Add another slice of butter and melt
8) Add spring onions and garlic
9) Stir-fry for 2 minutes
10) Add sweet pepper and stir-fry for 1 minute
11) Add cooked rice, soy sauce, fish sauce, curry, and cayenne pepper
12) Stir-fry for 2 minutes
13) Add pineapple, bell peppers, and previously removed chicken breast mixture (step 5)
14) Stir-fry for 3 minutes
15) Taste for salt (you can add more fish sauce if you need to)
16) Enjoy
