Hope everyone is doing very well. It’s a chill Saturday and I’m catching up on some movies and TV shows while typing this recipe. Mackerel fish is one of my favorite meats, and I prefer it fried. I promise I’ll go back to ‘healthy-baking’ when next I make stew. 

This meal is a Nigerian recipe, and most Nigerian families cook some variation of stew at least every week. As students or people living by themselves, a pot of stew can make a feeding easier. All you have to do is prepare white rice, potato, yam, plantain, etc. You can literally eat a different meal everyday with the same pot of stew.

You will find recipes that include tin-tomato. I rarely include it in my stew because I prefer using fresh tomatoes and bell peppers. But, feel free to include it in your cooking, if you prefer. If you do, stir-fry for about 5-7 minutes in Step 6, before adding the tomato mixture. This helps reduce the sour taste of the tin-tomato and improves the overall final stew.

INGREDIENTS

Mackerel Fish – 2
Onions – 2 Medium Bulbs
Stock Cubes – 4 Cubes
Salt
Cayenne Pepper – 1/2 Teaspoon (Optional)
Tomatoes  – 6 medium size
Bell Pepper – 2
Scotch Bonnet – 3 (Optional)
Garlic – 2 Cloves
Ginger – 1/4 inch
Rosemary – 1/2 Teaspoon
Thyme – 1/2 Teaspoon
Curry – 1/2 Teaspoon
Parsley – 1/2 Teaspoon
Bay Leaves – 3

STEPS

1) In a clean pot, add washed & cleaned mackerel, 1 chopped onion, 2 stock cubes, 1/4 teaspoon salt, 1/4 teaspoon cayenne pepper, 3 cups of water, cover and boil for 15 minutes
2) In a blender, add tomatoes, bell pepper, scotch bonnet, peeled ginger & garlic, 1 onion bulb, and blend.
3) Pour ground tomato mixture into a pot, and boil until the consistency is thicker and water is evaporated
4) In a clean pot/frying pan, add and heat 3 cups of vegetable oil
5) Fry the cooked mackerel fish until its golden brown (should take approximately 15-20 minutes)
6) To the same oil, add boiled tomato mixture, rosemary, thyme, curry, parsley, and bay leaves. Cook for 20 minutes, stirring intermittently. (note: do not add salt yet)
7) Take out the bay leaves
8) Add fish stock
9) Taste for salt, and add a little at a time as needed.
10) Add fried fish
11) Stir, simmer for 3-5 minutes
12) Enjoy
